Crockpot Chicken Curry



I had a lot of fun with this recipe! It is so easy and it gave me a reason to use my Nutribullet (instead of a food processor). My first attempt at indian food turned out great! Warning: your house/kitchen will smell like indian food! :) Let me know what you think!

Back to healthy cooking! I made this for lunch the other day and it is refreshingly delicious! You can grill the chicken for a better taste, but we did decide to just pan sear ours until a little blackened. Hope you like!

 I have made this over and over! Make sure not to over cook your veggies! you just want to warm them in the skillet! I cannot believe that I never knew I could use my veggie peeler to this way!  One of the easiest and filling recipes I threw together. You can substitute rice for Quinoa - as my hubby likes to do! Pretty delicious for a quick meal!
