Not Your Grandma's Chocolate Chip Cookies



Ingredients:
  • 1/3 cup coconut oil
  • 1/4 cup brown sugar
  • 1/4 cup coconut sugar (Or white sugar
  • 1/4 cup of unsweetened applesauce 
  • 1 teaspoon vanilla extract
  • 1/2 teasopoon baking powder
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup dark chocolate chips
  • 1/4 cup crushed walnuts
  • 1/4 cup old-fashioned oats

Directions:
  1. 1. Preheat oven to 325 degrees F (165 degrees C). Line a baking sheet with parchment paper.
  2. 2. Combine melted (slightly warmed) coconut oil, brown sugar, and white sugar in a large bowl; beat until creamy. Beat in applesauce and vanilla extract.
  3. 3. Mix flour, baking soda, baking powder, and salt together in a bowl. Gradually beat into the coconut oil mixture until just blended. Fold chocolate chips, walnuts and oats into the dough.
  4. 4. Roll 2 tablespoons of dough into a ball. Place on the prepared baking sheet. Repeat with remaining dough, spacing balls about 2 inches apart.
  5. 5. Bake in the preheated oven until cookies are golden on the bottom, 15-20 minutes.

To be honest, I have and extremely hard time staying away from those tempting "bad for you" foods! If there's one single bag of oreos around the house I am known to devour them in nearly one sitting (My hubby will vouch for that!). So I have to find foods that curb those nasty cravings and are so absolutely delicious that I forget all about those devilish foods. These are a short list of my absolute favorite snacks that curb my sweet tooth.

Cucumber Avocado rolls:
Ingredients:
  • 1 Avocado
  • ¼ Cup of Basil Leaves 
  • 1 Clove Garlic
  • 2 teaspoons Lime Juice
  • ¼ teaspoon Salt
  • 1 Cucumber
  • Smoked or Sweet Paprika 
Directions:
  • Place all ingredients(Except for the Cucumber & Paprika) into a blender or food processor and blend well. With a knife or vegetable peeler slice your cucumber into thin slices. Lay out the cucumber slices then cover with the avocado mixture. Roll up & top with Paprika. Voila!  

Best Darn Guacamole & Homemade Tortilla Chips
Ingredients:
  • 1 Avocado
  • 1/2 Beef Tomato - chopped
  • 1 Tablespoon Lemon Juice
  • 1/4 Cup Chopped Onion
  • 1 Tablespoon Fresh chopped Cilantro
  • 1/3 of a Jalapeno Finely Chopped
  • 1 Tsp Salt
  • 1 Tsp White Vinegar
Ingredients For Chips
  • Your Favorite Tortillas - I like whole grain
  • 1-2 Tablespoons of Olive Oil
  • 1 Tsp Salt
  • 1 Tsp Lime Juice (Optional)
Directions:
  • Preheat oven to 350 and line cookie sheet with foil. You can use a cookie cutter or tear the tortilla chips by hand. In large bowl placed cut/torn tortilla pieces into bowl with olive oil, salt, and lime juice. Cover bowl and shake until all pieces are coated in the mixture. Place onto cookie sheet and bake until crispy (cook time will depend on the type of tortilla you use) Mine take about 10 mins. Using a fork mash avocado in bowl with lemon juice. Mix all other ingredients into the avocado mixture. Enjoy! 

Fried Bananas - SO SIMPLE 
Ingredients:
  • 1 Banana (I also like to use plantains) Cut into medium size pieces
  • 1 Tablespoon Coconut Oil
  • 1 Tablespoon Honey or Agave
Directions:
  • Heat oil and honey on medium to high heat. Drop in bananas/plantains and let brown on each side. Voila! You will love these! 

Homemade Blueberry-Flax Breakfast Bars
Ingredients:
  1-1/2 cups old fashioned oats
  1/2 cup chopped raw almonds
  1/2 cup blueberries
  1/4 cup flax seeds
  1/4 cup honey
  1 teaspoon salt
  1/2 teaspoon cinnamon
  1-1/4  unsweetened vanilla almond milk
  1 egg, whisked
  1 teaspoon vanilla
Directions:
  • Preheat oven to 350 degrees. Stir together oats, almonds, blueberries, flax seeds, honey, salt, and cinnamon in a large bowl. Add milk, egg, and vanilla then stir to combine. Pour mixture into a nonstick-sprayed 8×8 baking dish then bake for 25-30 minutes, or until toothpick inserted into the center comes our clean. Cool completely then cut into bars/triangles and store in the refrigerator for 2-3 days, or individually wrap in saran wrap and freeze. Microwave to reheat.

    Crockpot Chicken Curry



    I had a lot of fun with this recipe! It is so easy and it gave me a reason to use my Nutribullet (instead of a food processor). My first attempt at indian food turned out great! Warning: your house/kitchen will smell like indian food! :) Let me know what you think!

    Back to healthy cooking! I made this for lunch the other day and it is refreshingly delicious! You can grill the chicken for a better taste, but we did decide to just pan sear ours until a little blackened. Hope you like!

     I have made this over and over! Make sure not to over cook your veggies! you just want to warm them in the skillet! I cannot believe that I never knew I could use my veggie peeler to this way!
